Good Agricultural Practices (GAPs) describes a set of principles that, when applied to the production of fresh fruit and vegetables, help to minimize the risk of microbial contamination of fresh produce destined for human consumption.

The U.S. Food & Drug Administration’s (FDA) Guide to Minimize Microbial Food Safety Hazards for Fresh Fruits and Vegetables serves as the basis for most food safety efforts in the U.S.
